Ingredients (for 4 servings):
1 large sweet potato, diced
600 g chicken fillet, diced
3 cups of broccoli
1 red pepper cut into strips
1 medium red onion cut into strips
¼ cup olive oil
4 cloves of garlic, finely chopped
2 tbsp basil, finely chopped
2 tbsp parsley, finely shopped
Salt and pepper
Preparation instructions:
Preheat the oven to 200°C and place a baking paper on a large baking pan. Spread the sweet potato with some of the oil and a clove of garlic and bake for 20 minutes. Then add the remaining vegetables and the chicken, garlic, oil and spices. Bake for 15-20 minutes and serve immediately.
