Ingredients (5 servings):
1 package of Eurodiet soy spaghetti (*contains 5 servings)
2 large tins of tuna in water
3 tbsp capers
2 tbsp olive oil
1 small onion, finely chopped
Juice of 1 medium lemon
Zest of 1 medium lemon
2 tbsp dill
½ tsp salt
¼ tsp pepper
Preparation instructions:
Boil the soy spaghetti according to the instructions on the back of the packaging.
Drain them, place them in a bowl, add half of the olive oil and keep them warm.
In a non-stick frying pan, heat the olive oil over medium heat and sauté the onion for 2-3 minutes, until it softens.
Drain the tuna thoroughly and add it to the pan together with the capers. Stir gently for 1-2 minutes. At the end, add the lemon juice and the lemon zest.
Bake in the stove for half a minute until the lemon juice evaporates, then serve with freshly ground pepper.
Nutritional tip:
Complete your meal with a salad using green leafy vegetables (or vegetables from list 1 for those who follow Eurodiet method).
